Hams and shoulders are not packed in individual cartons. We place all the items you purchase in the smallest possible number of cartons to save on shipping costs. If you prefer having them packed in a different way, email us at info@ibergour.com indicating how many hams/shoulders you want, where you want them shipped and how you want them packed. We will calculate the additional cost of shipping according to your indications.
We ship the whole shoulder wrapped in grease-free paper and an outside cloth wrapper, all encased in a plastic bag for maximum hygiene. When you receive it, take it out of the bag and remove all the wrapping. You can keep it hung by the string at room temperature for up to 6 months before starting it. Once cutting has started, consume it in 1-2 months.
We remove the rind and the bone, cutting it into as many parts as you wish, and vacuum wrap each piece separately. We leave only the edible fat (ready to slice and serve).
We slice your entire shoulder and wrap the slices in 100-gram vacuum packs, separating them with plastic strips for easier serving.
We can slice the shoulder by machine (+26.69 €) or with a knife (+57.19 €).

En suivant les conseils donnés sur le site ibergour.fr, j'ai choisi mon épaule pour une "cousinade" étalée sur queslques jours, avec des familles de passage, de multiples occasions de retrouvailles, d'apéritifs, de dégustations.
Mon épaule de Pata Negra est arrivée parfaitement emballée. Je l'ai immédiatement mise au frais, et rangé les os au congélateur pour utilisation cet hiver. Chaque paquet sous vide d'environ 100 g m'a permis de présenter une assiette de dégustation (sauf qu'il a fallu parfois plusieurs paquets...). Mon assiette ne mettait pas longtemps à se vider. J'ai même vu des végétariens et des invités au régime sévère qui ont trouvé de bonnes raisons pour en re-demander ! Ce n'est pas tous les jours qu'on est aussi gâté !
J'ai reçu de chaleureuses félicitations : je n'y suis pas pour grand-chose, je les re-transmets ici bien volontiers à Ibergour. A refaire !
Following the advice given on the ibergour.fr website, I chose my shoulder for a "cousinade" spread over a few days, with visiting families, multiple opportunities for reunions, aperitifs, and tastings. My Pata Negra shoulder arrived perfectly packaged. I immediately put it in the fridge, and stored the bones in the freezer for use this winter. Each vacuum-packed package of about 100g allowed me to present a tasting plate (except that sometimes it took several packages...). My plate didn't take long to empty. I even saw vegetarians and guests on strict diets who found good reasons to ask for more! It's not every day that we are so spoiled! I received warm congratulations: I have little to do with it, I gladly pass them on here to Ibergour. To do again!
I'm a returning customer, so this tells you everything about it's quality. We only buy this Jamon since we like the taste and the fact that it is BIO. Simply the best Jamon.

The pure Iberian pigs are declared to be fed only acorns. It melts in the mouth with a sweet flavor and extraordinary persistence that makes you want to cut more.
Since we discovered it, we buy only this one ("Paleta" Señorío de Montanera (Shoulder Jamon)). Love the taste.

Paletilla purchased several times and never disappointed. How can you change. It is a magnificent product, sweet and intense just right with its part of tocino correct in percentage and excellent as flavor. Never found rancid.. High level. I recommend it as well as the jamon
