The blade end of the loin is the juiciest and one of the most prized parts of the pig (there are two in each pig). Lomito is similar to Maldonado's lomo embuchado, but juicier because there is more fat in this part of the loin.
The outer fat is removed from the loins and they are seasoned and marinated for 48 hours, then stuffed into natural colon casings and dried and matured for 8 to 12 months.
When the lomitos reach the optimum point of curing, they are stored in the tradition of the matanza (pig butchering season) in Extremadura by placing them in an earthenware jar and covering them with white lard from the same pigs.
Ingredients: Blade end of the loin from bellota-grade purebred Iberian pigs, paprika, garlic, salt and authorized preservatives.
Production
Bellota-grade purebred Iberian pigs. A purebred Iberian pig comes from parents of 100% Iberian bloodstock (not cross-bred) and accounts for less than 5% of the country's Iberian pigs. The animals add at least 37% of their initial weight on a diet consisting mainly of acorns, grass, roots and tubers.
Enjoying your lomito
Remove the plastic vacuum packaging and leave at room temperature at least 1 hour before consuming.
Keep in the fridge, or in some place under 15ºC / 59ºF. Do not freeze.
