A very nice Bellota shoulder, but a touch dry, good aroma and flavour which came through when slowly savoured.
Aroma and Taste were amazing, the texture was moist and succulent, with the fat oozing from all surfaces of the slices. First class product.
The flavour and aroma of this was very good but let down by the very dry nature of the slices (very chewy) looked very aged.

Incredibly moist, aromatic and tender, like all lomo well marbled with fat of a very distinctive flavour. Wonderful product.
A very understated item, its aroma was subtle giving away none of the surprises when it was eaten, amazing depth of flavour, well balanced in seasoning.
The meat is evenly marbled with melting fat and the depth of flavour from the muscle tissue is extraordinary, the use of the paprika is well judged. In combination these flavours are unsurpassable.
The darker colour of the meat has a very deep flavour, both sweet and savoury and a great aroma. My salchichon did have quite a bit of gristle though.
