I love the natural aged taste of this cheese! It tastes butter and nuts, and is not salty as so many cheeses are. Salty tasting cheese is a sign of lower quality... I favor and highly recommend this delicious cheese as the reference cheese standing out from the rest of raw unpasteurized aged sheep cheeses.
Most cheese you find on the shops are soft cheeses. This is an excellent strong and hard cheese that I really enjoy with a good red wine.
A very pleasant cheese; the rind is only as hard as you would expect from such a cheese, and the paste has a fine texture and appearance. The initially mild taste develops on the palate with an appealing nutty tang and is excellent partnered with membrillo or even honey. If you don't mind mixing your cuisines, it makes a very good pesto.
