first taste of a shoulder Jabugo Ham. No sin, truly excellent! Excellent flavor. Just quanitativo fat. After a week (we are 3). The extra virgin pretty good gift.
Me sorprendió que la paleta fuera tan oscura por fuera. Normalmente las limpian; mal por el productor.
Empecé por la maza (pezuña hacia arriba). Siempre lo hago, con jamón y con paleta. Excelente intensidad; bouquet penetrante a hierba y frutos secos. Bien de grasa: tierna y fundente, blanca tirando a rosácea, sin exageración.
La contramaza y el codillo un pelín demasiado curados para mi gusto, pero es que llegué a ella una semana más tarde.
Nada, pero que nada que envidiar a los Jabugo más renombrados.
I was surprised that the palette was so dark outside. Normally clean, bad for the producer. I started with the hammer (claw up). I always do, with ham and shoulder. Great intensity, penetrating bouquet of grass and nuts. Good fat: tender, melting, fucking white rosacea, without exaggeration. The contramaza and a tad too cured knuckle for my taste, but I got her a week later. Nothing, but nothing to envy the most renowned Jabugo.
Contrairement a la photo, le produit est arrivé tout recouvert de noir (salpetre ?)
De plus le gout etait desagrable.
Mais Ibergour nous a proposé un echange gratuit (et rapide !) avec un autre produit (5J) qui lui, nous a donné entiere satisfaction.
Je recommande ce site qui nous a montré sa reactivité.
Unlike the photo, the product arrived topped with black (saltpeter?) Also the taste was inconvenience. But Ibergour offered us an exchange free (and fast!) With another product (5J) which gave us full satisfaction. I recommend this site that showed a strong reactivity.
