It does not have an official seal, nor does the label certify the breed. Why? Because this producer works small, outside the industrial circuits, and prefers to invest in his land and his animals rather than in bureaucratic procedures. But what he does have is the authentic quality and deep flavour of hams made in the traditional way: pigs reared in the wild, fed on acorns in the pasture during the montanera and cured with patience.
