This was my first purchse of a complete shoulder, having previously bought ready sliced ham from Ibergour. I had not realized how much waste there is in a shoulder. I have cut off huge chunks of skin and fat. I started at the thin side and then when that ran into bone I turned the shoulder and started on the thicker side. I am now down about half way but there is only a thin 3 or 4cm wide strip of ham to cut. Maybe a leg would have more meat on it.
The flavour is superb. Sweet and just a little chewy but delicious. I keep it in the kitchen at room temperature. I might go back to prepacked ham though as I have only a small kitchen.
A lovely jamon in the artisan style, which keeps getting better as you cut it and get to the sweet and tender meat in the middle. We also use the fat trimmings to make some of the best roast potatoes you have ever tasted. Now as the ham diminishes we look forward to a tasty lentle dish made with the ham bone. Every year we order a ham from you when my father in law comes to the UK and every year its a good one.
