The first one is a manchego-style cheese made from raw sheep milk that has been aged for over 9 months. It has an intense flavor with a slight sharpness. It can also be eaten as a dessert, paired with quince jelly, walnuts, pine nuts, or almonds.
The other cheese is semi-dry and made from pasteurized sheep milk. It has been aged for a minimum
of 3 and a half months and goes very well with dry or sparkling white wines.
Each wedge of cheese has a net weight of 250 grams.
